Why our tables lean on fewer, better blooms — and how we choose them.

It is tempting to fill a table. We have learned to do the opposite — to choose a few good stems and give them room to be seen.

Colour follows the menu and the setting, never fights it. A little asymmetry keeps things from feeling staged; negative space keeps the eye on the food and the faces.

Restraint is not the absence of decoration. It is the confidence to stop one step earlier than you think you should.
